Dealing with specialty items is always a big concern. "We can never seem to close the loop and plan ahead enough," says a California buyer. Low commodity prices have created problems for other buyers: "Low commodity tags compared with traditional values have hurt the availability of inexpensive alternative ingredients," says a buyer in Mississippi.Other buyers report problems such as getting suppliers to return calls, to perform follow-up functions, or to "communicate meaningfully," according to a buyer in New Jersey.
A growing concern is the increasing "megamergers" among suppliers. "Consolidation in markets and increasing price control due to mergers and acquisitions could cause problems," says one buyer.
